The Caldwell County BBQ project will transform three existing 4,600 SF parcels into a single 10,500 SF lot for the development of a new 1-story restaurant in Peoria’s Old Town District. Designed to activate the urban core while preserving the area’s historic character, the restaurant will feature a 4,840 SF interior space, a 1,525 SF covered dining patio, a 240 SF covered outdoor waiting/egress patio, a 1,210 SF covered smoker area, a 560 SF outdoor cooler, and a 325 SF container storage area. A defining feature of Caldwell County BBQ, the double-barrel smokers, will operate at 250°F, with wood storage strategically placed along the east patio perimeter for both function and visual appeal. By creating a dynamic gathering space, Caldwell County BBQ will contribute to the Old Town area’s revitalization, offering a distinctive dining experience that promotes social engagement, supports local business growth, and reinforces the district’s identity as a vibrant, pedestrian-friendly destination.
