Caldwell County BBQ
Marking the first completed project in the City of Peoria's downtown revitalization initiative, Caldwell County BBQ brings a ground-up restaurant to the Old Town District on a site consolidated from three parcels into a single 10,500 SF lot. The single-story building features 4,840 SF of interior dining beneath exposed gable trusses, a 1,525 SF covered patio, outdoor waiting area, and a 1,210 SF covered smoker area housing the restaurant's signature double-barrel smokers. A 560 SF outdoor cooler and 325 SF container storage area support the barbecue operation, with wood storage along the east patio perimeter serving both function and visual appeal. The building extends to the property lines, requiring all construction operations to remain within project boundaries while alley improvements temporarily restricted access. Detailed sequencing and close coordination with utility providers kept work moving through these constraints. Delivered in just over nine months, the project contributes to the broader vision of activating Peoria's downtown corridor.
